Tasting Note: The Carter Ashmore Vineyard is located in the Fairhall sub-region of Marlborough and planted to Mendoza clone Chardonnay. Once an old riverbed, the soils are a mixture of layered silt and alluvial gravels deposited over time and many flood events. These soils, in combination with low yields and a sensitive farming regime, are key to unlocking the distinct singular expression from this gem of a site. Lightly roasted cashews and warm sourdough. Green apple and grapefruit build tension. Showing beautiful natural acidity, minerality and texture; a fine structure all fermented this year in larger format seasoned French oak and stainless steel barrel.
Winemaking Note: Hand-harvested on 26th March 2017. Whole bunches were loaded and pressed slowly over 6 hours to a small stainless steel tank. No enzyme or sulphur additions were made during or post-pressing, with a smaller, harder press fraction separated on taste and discarded. After 6 hours settling, the main press fraction was transferred with a high percentage of solids to one seasoned 500 litre French oak puncheon and one stainless steel barrel for fermentation. Primary fermentation took seven days to naturally initiate and one month to complete. A full and natural malolactic fermentation completed early Feb 2018, after which the young wine was topped and remained on original lees in barrel, without stirring or sulphur, until late March 2018. The components were then racked to tank where they remained on lees for a further 7 months before sulphuring prior to bottling in November 2018. This wine was bottled without fining or filtration.
