Tasting Note: “After 12 months in barrique the lees were stirred up from the bottom of the barrels and the wine was transferred to a steel sausage tank for further 12 months maturation on lees. Some fresh 2015 vintage lees were added to assist with mouth feel and weight. 24 months after harvest the wine was bottled without fining and with a small addition of SO2. For me personally I cannot help but think that the pinot gris variety is not white but a brown, dark copper colour so why would it be made as a ‘white’ wine. It makes sense to me that you would embrace both colour and a degree of phenolic tannin in the winemaking process, after all, it isn’t pinot blanc or pinot noir… it is pinot GRIS. The use of skins in fermentation opens up doors of aroma and flavour that to me at least begin to make the variety relevant. The skins also give back palate grip and texture which only add to the great affinity that pinot gris has with food. I don’t see orange pinot gris as being alternative at all. Rather, I see it as appropriate and entirely desirable.” – Michael Glover, winemaker
