Tasting Note: Light ruby, not brilliant, but with lively lights. Immediately serious on the nose, brooding, with somber depths; scents of black cherry, black plum, even blackberry, with stem and torus still attached. Also a fascinating note that is both deep and high, something like the similar simultaneity of pomegranate molasses. So unyielding, so adamant and powerful, that after the easy charm of the Angel Flower this seems almost menacing. This does not covet winks and smiles, but instead commands heedfulness. The very long finish feels expansive, and seems astonishingly gracious, for a wine that is mostly exigent in nature.
Winemaking Notes: We hand picked 31hl/ha from this gentle slope, bearing a resolute voice. Strong, beautifully structured soils; 25% clay, 15% active lime. Carefully sorted, hand destemmed, and partially crushed by foot. Fermented with yeasts from the vineyard, cuvaison of one lunar cycle, 27-28 days. Settled for another lunar cycle, transferred by gravity to barrel, all French, 10% new. Elevate of 12 months, then bottled unfined and unfiltered, on a propitious day.
