“‘White Heart’ was the name of a wine made in Paso Robles by the Dubost family. I lived with them during my first vintage in California and their son who passed away several months before I arrived was the winemaker. He pressed off some Grenache and made a very unique site wine which they called ‘White Heart’. The Riesling in this bottle is a very different wine but made with a similar approach, freeform. Think texture, sweetness, acid and, most importantly, balance. I dedicate this wine to the Dubost family; without their support and hospitality, this wine would never have been made.” – Sierra Reed, Winemaker
Tasting Note: Lemon curd mouthfeel with a searing acid line cutting trough the glycerol coating. The phenolic structure drys out the finish and exacerbates the salinity and mineralic tingle that dances across the tongue. This wine is layered and and textured yet undeniably Riesling, giving up high aromatics for power and moreishness.
Winemaking Notes: 23 grams/litre residual sugar, wild fermentation, whole bunch press, aged ono lees for 7 months in stainless steel. 2,700 litres total production.
