Tasting Note: The wine has a vibrant & red fruited bouquet with hints of earth, leather & lavender, while the palate shows ripe silky cassis, berry and plum flavours with fine supple tannins which are framed by toasty oak.
Winemaking Notes: This is not the bigger style of Tempranillo you may find from Spain, but expressive of our vineyard and region. Made in small volumes with sensitive winemaking we aim to let the variety speak for itself. The Tempranillo is de-stemmed into open top French cuves where it cold soaks for a week before it spontaneously ferments, lasting for about 3 weeks. It is then pressed off into a mixture of seasoned and new French oak puncheons (20% new, 30% one year old, 50% two year old) where it matures for 20 months before bottling, without filtration.
