“A combination of hillside soil and coastal aspect. No additions (220 is the code for sulphites) in this wine, which was tasted a week before going to bottle. Concentrated pineapple, supple, textured and fresh. Compelling and, if it holds together in bottle, a real flag-bearer for ‘living wine’.” – Decanter
“‘Minus 220’ refers to the fact that theres no E220 (sulfur dioxide) added. From Hayden Penny of the Supernatural Wine Co, this is fabulous… This has no added sulphites, and displays lovely perfumed melon and apricot fruit with some spice, and textured pear and citrus fruit. So lovely.” – Jamie Goode, Wine Anorak
Tasting Note: Golden yellow colour. A waxy, honeysuckle and lemon, lime and bitters nose with hints of fresh lemon and a creamy ginger spice. Rich and textural in the mouth with flavours of ripe grapefruit and firm stonefruit. Delicate in structure, with just a touch of lemon seed phenolics, yet powerful in flavour. Minus 220 is an organically farmed and naturally vinified wine with no additions including sulphur. The philosophy relies on great terroir, a focus on purity, and old world farming and vinification.
Winemaking Notes: Grapes were hand-picked from the Eastern section of the vineyard, which due to lighter, less vigorous soils and more wind exposure produces smaller, riper berries and lower yields. De-stemmed without crushing, fermented at cool temperatures with indigenous yeast using a pied de cuve formula. Seven days on skins, fermentation finished off skins to ensure minimal oxidation. Matured for six months in neutral oak on its lees to develop texture before being bottled unfined, unfiltered and with zero additions including zero sulphur. Full malolactic fermentation.
