Dragon Bones Chardonnay 2025

A finely balanced, mineral-driven Chardonnay from Waitaki Valley, combining freshness, texture and precision.

Tasting Note:
Bright lemon in the glass. The nose is generous and expressive, opening with bright citrus and lemon curd before revealing crushed limestone, flint and a delicate herbal lift. The palate shows hallmark Waitaki freshness, with vibrant acidity and a saline, mouthwatering character layered with white peach and apricot. Plush yet precise, finishing long with a sapid mineral finish.

Winemaking Notes:
The inaugural Chardonnay release from Dragon Bones, grown on limestone-rich clay and marl soils in the Waitaki Valley. Whole bunch pressed and fermented in second-fill puncheon and barrique, with partial malolactic fermentation to retain freshness while adding texture. After five months in barrel, the wine was transferred to stainless steel on light lees for final élevage. Clones B95 and 15. 13.5% alcohol, pH 3.3. Approximately 600 litres produced.
