Winemaking Notes:
Sourced from organically farmed vineyards in Wairarapa, the fruit is harvested to retain freshness and aromatic intensity. The grapes are destemmed with a short period of skin contact to enhance texture and complexity. Fermented in a combination of stainless steel and French oak, bringing together purity of fruit with subtle depth and structure.
