“Layered aromas of wild blackberry, cedar and clove with savoury nuances of salami, mushroom cream and coffee. The generous, velvety palate bursts with exuberant ripe fruit and spicy warmth. Smoky oak, mocha, plum, blackberry and cinnamon compete on the finish. A concentrated, though medium-bodied and savoury style with lingering white and black pepper flavours, it is just starting to move into some tertiary complexity with more to come if left to age.” – Stephen Wong MW
Tasting Note: Lively purple-red colour with dark cherry and black currant, notes of white pepper, bacon, and a hint of green olives. Elegantly structured with vivid acidity and lots of freshness. The finish shapes, develops, and lingers, with minerality, bacon, black cherries, and a hint of dark chocolate in the finish. This will age and evolve nicely for a couple of decades.
Winemaking Notes: Harvested 4th & 5th April 2022. Hand-picked, carefully selected grapes, 100% de-stemmed. Cold-macerated and fermented in stainless steel vats and left on the grape skins for 3 weeks. Aged in 35% new and 65% used French oak barriques for 33 months. Bottled 17th January 2025.
