Winemaking Notes: Grapes were hand harvested from 25 year old vines in Bannockburn, a sub-region known for producing great wines in Central Otago. Mainly clone Abel. After being transported to the winery in Waipara, grapes were destemmed and fermented with wild yeast in an open-top fermenter. Then the wine was aged in French oak barrels for 14 months before bottling. No fining, no filtration.
