Tasting Note: Waxy honeydew and citrus on the nose, with light florals and a slightly autolytic/bready quality. Impeccably balanced on the palate, showing Takahiro Koyama’s influence from his time working in the Mosel in Germany, with a precisely-judged acid line cutting through the white-fleshed fruit character. A delicate, subtly off-dry expression with length and depth. Good drinking now, and will cellar well for 5 years.

Winemaking Notes: Warm Spring and bud burst was a couple weeks earlier than average year, but followed by extremely cold summer result in low brix grapes at harvest.  Good fruit set, so the quantity was good, almost no botrytis influence. Harvest date 10th April. Brix at Harvest 20.1. Ferment with Yeast DV-10 in a stainless steel tank under temperature control (12 to 13 degree C). Stopped fermentation at around 15g/L residual sugar, filtered and bottled at the end of May.
