“…the smokiness of this wine is palpable! It’s smoked paprika, it’s coffee-rub brisket, it’s bacon wrapped around prunes. It’s a double-bass growl, a sax in a dark bar at midnight, old velvet in an old library soaked with memories of pipe and fireplace. It tastes just like the rather beautiful, fluid spill of charcoal black, smoky dove grey, and gold thread in the centre of the triangle on the front label. Light that fire. Pour a glass.”
Winemaking Notes: 60% Syrah, 40% Carignan. Selected grapes are destemmed and vinified separately. Alcoholic fermentation in concrete tank over 4 weeks. After malolactic grapes and blended and aged for 18m in 30% new French oak barrels and the balance in 2 season old barrels. After a light filtration, wine is bottled to a descending moon, for stability, with minimal added sulphur for freshness and to protect the wine. Wine goes well with red meat, pasta and hard cheeses. If you’re daring ~ dark chocolate! Pairs well with vegetarian potato/cheese bakes, squash, gutsy pasta sauces and ratatouille.
