Intensely structured yet approachable, its ripe, velvety tannins make it a perfect match for rich meat dishes. Winemaking Notes: “A few days of cold maceration precede a long, cool wild fermentation, followed by gentle pressing into a single 500L French puncheon for malolactic fermentation. Aged on fine lees for 24 months, this rare Italian varietal remains unfined (vegan) and unfiltered, preserving its purity and depth. A wine that first captivated me as a young winemaker, inspired by one of the vignerons I admired in Alto Adige.” – Hans Herzog
