“The 2022 Sur Les Nuages is the voice of the vineyard, taking Pinot Noir fruit from all blocks at the estate, just as the Le Chant du Vent does with the Chardonnay. Aromatically, the wine leads with red fruits and woodsy spice, the palate revealing the same characteristic mineral flow of tannin and texture as all of the wines—red and white—show. The structure is the attribute of these wines; they feel mineral and fresh but also fine and ductile. The fruit is predominantly destemmed, only a small whole bunch, and the tannins feel very much derived from the skin of the grape, from the place. While the Les Violettes is undoubtedly a purist’s wine of shape and kaleidoscopic complexity, this is an undeniably beautiful expression of place, hand and variety. Winemaking Notes: Sato Pisa Vineyard. Soil: Alluvial, sandy or silt loam with schist & quartz gravel. Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used. Harvest: Hand picked, 22 March – 9 April 2022. 47 hl/ha. Vinification: Natural yeast fermentation. 14% whole bunch, 26 – 29 days on skins. No additives except for 15 mg/l sulfites before bottling. Maturation: 19 months in French oak barrels. 10% new oak. Bottled: 15 December 2023 without fining or filtration. 6842 bottles produced.
