“A lovely bouquet with purity of fruit led by scents of pear and apple framed by a layers of lees and natural complexity. There’s a fine mineral quality then additional scents of white peach and blossom. A crisp and dry wine touches the palate first then a flourish of flavour from white fleshed fruits, some citrus and core of lees autolysis effect. Small bubble and a soft yet crisp mousse add texture. A dry lengthy finish, a wine for service as an aperitif or with oysters. Best from day of purchase through 2029.” – Cameron Douglas MS

“Gorgeously styled and expressed, the bouquet shows apricot, fig, lemon zest and oatmeal nuances, leading to a creamy palate that’s finely flowing  and persistent. Beautifully poised and refined with vibrant acidity, making it mouth-watering and highly enjoyable. Certified organic. At its best: now to 2030.” – Sam Kim

“Zingy with vibrant, high-toned lime leaf, seashell and apple aromas. Youthful, tight and zesty. The taut, linear palate shows tension and underlying pithy minerality. Light-weight flavours taper down to a salivating and dry finish. Quiet but interesting and refreshing.” – Stephen Wong MW

Tasting Note: Aromas of freshly baked apple tarte tatin on the nose. A great balance between the autolyse complexity characters and generous notes of poached nashi pear. The palate balances this delicate primary fruit with a refreshing and lengthy finish.

Winemaking Notes: Pinot Blanc from our Orchard Vineyard was hand-harvested and gently whole bunch pressed. The free run juice was fermented in stainless steel to preserve the freshness and fruit character of the wine. It was left on full lees and underwent indigenous MLF in spring. The wine was tirage bottled then matured for 12 months on lees to develop yeast autolysis characters prior to disgorging. pH – 3.0 TA – 7.2g/L RS – 4.0g/L
