“Certified organic, the highly characterful 2020 vintage was estate-grown and hand-picked in the northwest-facing TNT block in the Trig Hill Vineyard, at Bendigo. Fermented and aged for six months in a clay amphora, it was then matured for a year in seasoned oak barriques, and bottled unfined and unfiltered. Ruby hued, it is invitingly fragrant and mouthfilling, with rich, ripe fruit flavours, nutty, very savoury notes adding impressive complexity, and good tannin backbone. Already delicious, it should be at its best 2025+.” – Michael Cooper
Tasting Note: An intriguing nose of doris plum, cocoa, lavendar, and dried rose petals. On the palate ample spice, dark fruits, and earthy forest floor notes are underpinned by chalky fine tannins which frame the fruit and provide structure for a long, complex finish.
Winemaking Notes: With gentle and meticulous care the fruit was hand-picked and hand-sorted befroe being destemmed into a 700L Italian Amphora, 25% whole cluster. A slow cool spontaneous ferment follows, with a hand pigéage of the cap daily. After 27 days the wine was drained and gently pressed, before being returned to amphora for further ageing. The wine was racked, settled, and bottled unfined and unfiltered in November 2021.
