Tasting Note: Rich aromas of plums, dark cherries, and Christmas cake mixed with spicey notes of tamarillo, clove, vanilla, plush fruit, and chocolatey characters with a soft palate and a toasty finish.

Winemaking Notes: The grapes were hand harvested, carefully sorted, and destemmed into large format French Oak cuvées for fermentation. A daily regime of gentle pigéage and pump overs for careful extraction and development of the tannin. After 4 weeks, the wine was drained, gently pressed, settled, and racked into select oak barriques, of which 50% were new. After 14 months elevage, the wine was carefully racked, bottled unfined, and unfiltered.
