Tasting Note: Preservative-free, this North Canterbury Pinot Noir Rosé has been produced using the “Pétillant-Naturel” (Pet-Nat) or Ancestral Method of sparkling wine, in which the alcoholic fermentation is not completed before bottling. This produces a cloudy and pleasantly sparkling Rosé, with fresh, fruit-driven aromas and an irresistibly soft and delicate palate redolent of spices, red fruits and quince. Ridiculously enjoyable, summer in a bottle, and with zero chemical additions. Handpicked and produced in tiny quantities.
Winemaking Note: Hand picked organic Pinot Noir from our home block. Whole bunch pressed. Fermented in a 675L ceramic egg. Unfiltered. No additions.
