Tasting Note: 100% Cabernet Franc — Apex Vineyard, Bridge Pa. Pure, fragrant & intriguing barrel-aged Cabernet Franc. A wine of real depth and interest. Fragrant cherries and raspberry tea leaf notes lead into a generous and soft entry. Black fruits intertwine with cedar and subtle tar, revealing layers of complexity framed by fine-grained tannins. Soft, smooth, and generous. 2024 was a classic Hawke’s Bay season — warm days and cool nights. Exceptionally low yields, with Cabernet Franc down by 50%, heightened concentration and depth, resulting in wines that are generous and beautifully approachable in their youth.
Winemaking Notes: Hand-picked and destemmed with 100% whole berries. Cold-soaked for 4–5 days and fermented in small open-top fermenters. Aged for 18 months in French oak barrels (20% new). Unfined and unfiltered. pH 3.80 | TA 6.2 g/L
