Organised Chaos Syrah 2021

“The aromas and flavours are ripe but in the red to blue fruit spectrum, rather than black. It also reads very lively with complex whole-bunch aromas of spice and incense (an illusion, as there is no whole bunch fermentation here). Also present is that classic violet floral note of cooler-climate Syrah, and a savoury undertone of game and charcuterie. The palate is still quite closed and angular at present, with a herbal, rosemary edge and building tannins, which reminds us that this is quite a structured grape variety, despite the palate being elegant and lighter-bodied. The finish evolves through three distinct phases; from the crunchy herbal, through the fine, powdery cocoa grippy tannic stage, before softening to the long, sustained savoury black olive end. Unlike the other wines in this release, the Syrah will show its best both with food, and with time in the cellar. Give it a couple of years to integrate and unwind, then serve it with Saucisson, Sopressata or Chorizo.” – Stephen Wong MW
Tasting Note: Loads of fresh plums and boysenberry with a dark cherry spice. Silky smooth tannins with just a touch of oak. Gorgeous texture and a nice medium-bodied structure. The Syrah is grown by Pieter Koopman, in the Havelock Hills. This region is characterised by its north facing aspect and its limestone rich soils. No herbicide is used and an organic canopy spray regime is adhered to. Pieter’s farming methods lead to unadulterated site expression.
Winemaking Notes: Fermented with indigenous yeast, using a pied de cuve from the vineyard. Fermented to dryness and then given 7 days of post ferment maceration to allow the tannins to balance. Pressed off and aged in stainless steel tanks before being bottled unfined and coarsely filtered.
Region: Hawke’s Bay, New Zealand
