“Certified organic, the classy, distinctive 2022 vintage was hand-harvested at Rapaura, fermented with indigenous yeasts in a large oak cuve, and matured on its yeast lees in large, seasoned French oak barrels. Bright, light yellow/green, it is mouthfilling and savoury, with deep, ripe tropical fruit flavours, showing excellent complexity, balanced acidity, and a long, dry, very harmonious finish. Full of personality, it’s already delicious.” – Michael Cooper
Tasting Note: A beautiful balance of pink grapefruit, tropical papaya, and pineapple with green grass, nettle, and wet stone aromas. Crisp, lemon drop lolly flavours driving by a structure of vibrant acidity and cashew-spiced lees.
Winemaking Notes: Clone 316 and 317 Sauvignon Blanc was hand harvested form our Corners Vineyard. The fruit was hand sorted and whole bunch pressed with the free fun juice warm settled overnight. The cloudy juice was racked to a seasoned oak cuve for indigenous fermentation. The ferment was warm 24 degrees and lasted 12 days before the wine was dry . The wine was left on full ferment lees for 10 months prior to racking and preparing for bottling.
