“A blend of 75% Sangiovese, 18% Merlot and 7% Cabernet Franc, the Caiarossa 2021 Pergolaia opens to earthy notes and leather, with blackcurrant and dried cherry. The savory side of the wine is more pronounced in this sunny vintage. The wine finishes short, with medium-plus intensity and a streamlined mouthfeel. It aged in large oak casks for 14 months.” – Robert Parker’s Wine Advocate
“This shines with cassis and earth notes and a bit of ashy and peppery character. Soft and dense on the palate, it displays firm tannins soaked in blueberry fruit, with crisp acidity and a stern finish. From biodynamically grown grapes. It needs a couple of years of aging to approach maturity.” – James Suckling
Tasting Note: Following the Tuscan tradition, Sangiovese dominates in this blend, shaping Pergolaia into a wine of intense bouquet, seductive body with soft tannins and superb depth. 80% Sangiovese with 15% Cabernet Sauvignon and 5% Merlot, from the Podere Serra all’olio and Podere Nocolino vineyards.
Winemaking Notes: Harvested by hand in September. Maceration on the skins between 15 and 25 days. Two pumping-over a day for about 7 to 10 days, then once a day until the end of maceration. Malolactic fermentation in concrete tanks and wooden casks.
