Tasting Note: “Moderately deep, slightly hazy ruby-red, lighter on edge. The nose is elegantly presented, alluring aromas of dark herb, violets slowly lifting and lingering with depth, underlying Morello cherry, plum, liquorice and spice. Medium-bodied, Morello cherry and plum aromas entwined with a delicate dusting of black pepper, cinnamon and nutmeg, unveiling violets and Provencal herbs. The flavours are well-proportioned and elegant, showing concentration and depth. Refined, dusty tannin left a silky coating; vibrant acidity drives with focus and brightens the palate’s dark herb and earthy elements. This is an elegant, alluring Pinot Noir with flavours of sour cherry, plums with depth, persisting on a silky mouthfeel, features delicate spice and floral. Match with foie gras stuffed pigeon and Peking duck over the next 6-8 years. Handpicked, half clone 115 and a half UCD5, fermented to 13.5% alc, aged in barrels for 18 months approx, 25% new oak.” – Candice Chow
