Tasting Note: Stonefruit and strawberry, with a hint of sap and spice. The palate is soft and textural with sour stonefruit and sherbert. Super fine tannins and a fresh acid. A taste of summer!
Winemaking Notes: 100% carbonic maceration for 5 days, before being whole bunch pressed to a stainless steel tanks. Fermented cold until being bottled straight from tank, before the ferment is finished. Fermentation was then completed in bottle, providing the bubble for our Pet Nat. Disgorged at 3g/l residual sugar. Pét–nat is an abbreviation for “pétillant naturel”—a French term that roughly translates to “naturally sparkling”.
