The Domaine des Moriers is located in Lancié, in Beaujolais . It is directed by Arnaud Combier and François de Nicolay (from Chandon des Briailles to Savigny in Burgundy). They work a few hectares in Lancié, as well as small plots in Fleurie, Morgon and Moulin-à-Vent.
The approach is substantially the same as that adopted by François in his family estate. The soil is plowed by horse and the use of copper in the vines is kept to a minimum, while all other herbicides and pesticides are prohibited. In the cellar, Arnaud and François favor vinification in whole bunches which are traditionally carried out in concrete vats.
Generally, they tend to avoid pumping over and instead aim for a gentler extraction; the duration of the macerations varies according to the wines but rarely exceeds two weeks.
