Tasting Note:
A beautifully mature and savoury expression of North Canterbury Pinot Noir from Mon Cheval Wines. Layers of dark cherry, plum and dried cranberry are woven through notes of forest floor, wild herbs, subtle spice and earthy complexity. Time in bottle has brought a gentle softness and integration to the palate, with fine tannins and bright acidity carrying through to a long, savoury finish. Elegant, expressive and quietly complex, this is Pinot Noir with both character and charm.
Winemaking Notes:
Produced from Mon Cheval’s vineyard in the Weka Pass area of Waipara Valley using carbonic maceration and whole bunch fermentation to build aromatic lift and texture. Unfined and unfiltered, allowing the wine to retain purity, structure and site expression while evolving gracefully with age.
